Delicious Homemade Pina Coladas: The Ultimate Tropical Drink Recipe
Pina Colada is a high caloric blended fruit drink that is the national drink of Puerto Rico. If you ever feel like being transported to the beach, make one of these. It's a sweet and creamy combination of fresh pineapple juice, coconut cream and rum. Bottled mixes are available for purchase in many grocery shops. However, this recipe is so simple and so much more delicious when made from scratch, you will definitely skip a store-bought mix.
To make these you will need a high powered blender to crush the ice well. My recipe includes frozen pineapple chunks as well as pineapple juice, coconut milk and coconut cream. I also use white and dark rum to finish this drink. I was unable to move at the end of this drink. All I needed was a breezy nap to make my Sunday perfect. ½ of a large pineapple (cut into chunks and frozen)
6 oz pineapple juice
½ cup coconut milk
2 tablespoon cream of coconut (Coco Real)
1 cup Wrayrum white rum
2 cups of ice
Drizzle of dark rum
2 Maraschino cherries (with the stems)
Instructions
Cut the bottom of the pineapple and discard. Cut one slice of pineapple (with the skin on) and reserve it in the fridge for garnishing glasses.
Peel and cut the remaining pineapple into 2-inch chunks and freeze in a ziplock bag the day before making the drinks. You can also buy frozen pineapples in the frozen food aisle of your local grocery store.
To your blender, add frozen pineapples, coconut milk, coconut cream, white rum and ice. Blend ingredients until smooth. How long this will take depends on your blender.
Pour mix into your favorite large glasses and drizzle the tops with dark rum. Add cherries on top and garnish glasses with pineapple slices. Enjoy!
